*Stability*	Curcumin was relatively stable (85–95% remaining) in the acidic emulsions, but unstable (53–62% remaining) in the neutral–alkaline emulsions. These results can be explained in terms of pH-induced changes in curcumin structure and physicochemical stability.
*Description*	Curcumin is a natural compound with excellent anti-inflammatory and anti-cancer properties. Curcumin, with chemical formula C21H20O6, is a diketone compound extracted from the rhizomes of some plants of Zingiberaceae and Araceae. Curcumin contains about 3% ~ 6% of curcumin, which is a rare pigment with diketone structure in the plant kingdom.
