Soluble in ethanol, chloroform or ether. The solubility in water is 2.5% (mass) (10°C), the pH of the aqueous solution is 6.5, and the oily sediment is formed when standing. It is miscible with ethanol, ether and benzene. Unstable to thermal alkalis, stable to acids.
Stability
Allicin is unstable, in case of heat or alkali and loses antibacterial activity, but is not affected by dilute acids.
Description
Fresh garlic contains no allicin, only alliin. When garlic is cut or crushed, the endogenous enzyme in garlic, allinase, is activated, catalyzing the decomposition of alliin into allicin.

⭐Experiments showed that the egg production rate of adding 50 mg, 67 mg, 84 mg and 100 mg of allicin to the diet of each kilogram of layer chickens was increased by 2.73%, 5.95%, 11.10% and 7.83% respectively compared with the layer chickens fed without allicin feed, respectively, with a significant difference. Experiments on dairy cows have shown that allicin can produce a rich natural flavor of dairy cow concentrate, which has a strong food-attracting effect on dairy cows. Statistics show that the daily milk production of each cow can be increased by 2.28 kg, the amount of roughage feed can be reduced by 0.08 kg / day, and the daily income can be increased by 6-8 yuan. In experiments with lactating sows, it was found that allicin can increase the feed intake of pigs. The test of piglets weaned for 15 days to 28 days showed that feeding feed with allicin 100 mg/kg increased the daily weight gain of piglets and reduced feed-to-meat ratio, which was significantly different from that of piglets fed without allicin feed.
